Good gluten free option
I was looking for a gluten free bread and I found this cornbread mix. First of all, let me say I’m not american and this was my first time trying/cooking cornbread and I chose this one because *gluten free*. I made the recipe following the instructions on the package (I replaced milk with almond milk) and I added raisins. I really liked it: texture is a little bit dry, yes, but not too much. Not too sweet and with some salty notes. I think my result was a really good gluten free teacake, haha. If that’s what you’re looking for, cool. Idk how people eats it here, I saw that some people add creamed corn, cheese or sausage. Maybe it’s supposed to be more salty? Or they like mixing sweet and salty things? In my opinion I’d stay with the sweet side of this bread.

Tastes good
Different consistency and did not brown on top, but tasted good. I used vegan egg substitute and melted vegan butter in it rather than oil. I also added mild banana peppers and Bragg’s mixed seasoning to it which gave it good flavor.

A bit dense compared to fluffy sweet Yankee cornbread/ with gluten but delish. Kind of expensive.

Passable, with the Addition of Creamed Corn
I read the reviews before adding Bob's Red Mill Gluten Free Cornbread Mix to my Fresh cart, so I threw in a can of creamed corn, too, to supplement the mix. I prepared according to package instructions, PLUS an entire can of creamed corn, and baked in an 8x8" glass pan (instead of the recommended 9x9"). It came out a little runny in the center—I would stick with a 9x9", if you have one—but if you imagine the final product cut into 16 squares (4x4), the 12 pieces along the outside were baked perfectly.That being said, adding a can of creamed corn or doubling the liquid ingredients is probably the only way to prepare something edible from this mix. My final product was totally passable, but there was a chalky aftertaste, even with a little butter on top. I don't have a gluten allergy—I just gave this a try because I'm a fan of the brand—so it might be worth a shot if it's one of your only options. Otherwise, honestly, I'd pass. Sorry Bob.
