Q: will this work for a squash racequet?

I've never played squash but don't see why it wouldn't. You can cut it to the length that you need and it's very flexible and stretchy.

Q: How long is each roll?

43" long, with one end tapered to a point along the last 5". I've used this for a non-tennis application. On a 1.125" cylindrical handle, I can cover about 10".

Q: There are 60 in this pack. Since there so many, what is the shelf life? Will this last a year in a cool dry desk?

Pretty much unlimited as long as you keep then at reasonable temperature. This is our experience, we have not rigorously tested.
