Is this for breakfast link size??

These can be done as breakfast links. However, I would recommend a thinner casing as this one may be to thick at that diameter. I made some and it was good but casing was extra chewy. Recommend this casing for dinner sausage.

Is this a pound? a hank?

No where near a pound or hank. I'm guessing 4oz maybe. I've used it to stuff about 30 lbs of finished product so far and have enough to do 7 or 8 lbs more. When the package came I was surprised at how small it was. But there was plenty for my use. I've reordered the TSM Home Pak along with some sheep casings of a different supplier to try different recipes.
