The copper core makes this pan very responsive to changes of your temperature setting. Be aware that the copper will tarnish very rapidly if that is a concern you might have. All-in-all this is a lifetime pan.

I was tired of poisonous non-stick pans that didn't distribute heat well and only stayed non-sticky for a few months and then needed to be replaced. The only drawback to the Heston pan is how heavy it is. Also, it's obviously not 100 percent copper. I didn't expect it to be. They should just say there is a copper layer that distributes the heat.

This is a real, thick, copper pan with a little stainless where you need it. The copper is much thicker than the stainless, it works incredibly well, very even heat distribution. The finest pan I have ever seen other than the nanobond.

Beautiful pan, cook like a pro. We’ve used it a couple times, love the looks and size. Quality and style, dinner is served.
