First of all, I love this cheese powder! I’ve purchased the regular Hoosier Hill cheddar powder in the past and liked it, but they were out this time, so I tried the Premium Cheddar Cheese powder. Yep, it’s better. A bit cheesier. A bit less clumpy. Slightly less salty (maybe, the hubby and I disagreed on that one in a side by side taste test). We DID agree it’s worth the extra buck or two to get the Premium Cheddar. Second, I love these containers and reuse them for pantry storage. Perfect for flour, pasta, grains, etc. The picture just shows my flours shelf. I’ve got two other shelves of the 1 pound size I use for quinoa, beans, rice, etc. So don’t recycle, just reuse! Finally, I HATE the packaging they mailed this last shipment in! My precious bonus canister now has dented corners! I’m hoping I can push them back out when I empty it and wash it in warm water. But come on, Amazon. I’ve received a bottle of vitamins and a pair of socks wrapped in paper, bubble wrap, and inside a cardboard box the size of a Volkswagen, but you put a 2.5 pound fragile plastic container in a mailing envelope?!!! Who does that? It’s not like you’re not making money on shipping. Yeah, Amazon Prime shipping is “free”, but if you order direct from Hoosier Hill, you get free shipping and 10% off your first order and it’s about $4 cheaper, so who’s pocketing the extra $4 per order here? I didn’t find this out until after this order. So quit “cheesing” out on shipping and put this in a proper box, ya idjits! Dang. Minus one star for damaged packaging (sorry Hoosier Hill -talk to Amazon about their crappy shipping and I’ll reconsider going back to 5 stars on my next order). By the way, kids, this is cheese powder. It ain’t Mac n cheese mix (although they make that). If you want Mac n cheese, you gotta make a roux. Or a cornstarch slurry. Or read the directions on the Amazon listing. If you dump dried cheese powder into hot liquid, you get lumpy, hot cheese liquid. Just saying. Dang.

This cheese arrived very quickly. I came across this cheese powder when preparing to order Hoosier Hill's 25 pound box of white cheddar cheese powder. I decided that before we ordered the big box, I'd try one of the other flavors. We have been using these cheese powders to make homemade Mac and Cheese, since Kraft has changed their recipe or something, and it's been too disgusting to even eat lately. This Premium Cheddar Cheese powder was good, but I do prefer Hoosier Hill's white cheddar over this one. Additionally, the white cheddar we ordered from Amazon came nicely packaged in a box. This Premium Cheddar Cheese powder was just tossed in an Amazon bag, so the container was a bit dented when it arrived. A few other reviewers had noted the same packing issue, and I had been hopeful that Amazon had rectified their packing choice for this item, but unfortunately they did not. If you're making a cheese sauce like we use for the Mac and cheese, I highly recommend making the sauce in a separate pot over heat. The cheese clumps up a bit if it's not heated, but does melt into a nice creamy sauce when heated. I love that the ingredients are all ones I know and make sense to be in cheese powder. Not a ton of questionable stuff like Kraft likes to throw in. It comes out a bit more expensive than box Mac and cheese options when buying the smaller containers, but once we decide on a flavor we like, we plan to buy in the 25-pound bulk bag to save a bit of money. We won't be buying the premium cheddar cheese powder in bulk though. We'll go with one of Hoosier Hill's other flavors - likely the white cheddar.
