How hard is it to remove the legs? I'm hoping to be able to store it under my bed between workouts.

It's very easy to remove the legs. You can screw and unscrew the legs by hand.

Can someone recommend what’s the best size to get?

If you have a big area, then go for a larger diameter for a more comfortable, spacious workout. It is especially crucial if you are tall. You certainly do not want to feel concerned about lack of space while you are jumping, as this may impact your landing and rhythm.
