Is there a nutritional difference between the red and white wheat berries??

Hard winter wheat, has reacher nutritions and micro elements than the spring wheat. The spring wheat usually has shorter vegetation period and after the wheat harvest, the land is used for raising other crops. The product may be cheaper. I prefer red hard winter, this is the traditional seed color and I make whole wheat sourdough bread.

Which whole grain would you use to replace KA bread flour? And would you add gluten for the protein?

I use a wonder mill to grind hard, white, wheat berries into flour about once a week, and then I make the loaves in a bread machine. Naturally, it makes whole wheat bread. But, it tastes far better than store-bought, wheat bread or even home-made bread using KA whole wheat flour, because I’m grinding the wheat as I need it and it doesn’t have time to go rancid. Note: whole wheat flour doesn’t rise as high as KA white bread flour because the bran inhibits the gluten structure. You can partially overcome this by making a preferment the night before. Or, you can add Vital Wheat Gluten to the wheat flour. I do both—I make a preferment and I also add wheat gluten to my ground flour. My loaves turn out awesome and they still retain the nutrient-rich bran.

can these be used inside salads like Trader Joe's curry cauliflower wheat berries kale salad? hard or soft?

Yes..but..you mead to cook them first..they are berries..so hard

Are these winter berries?

Winter white berries are soft. Spring white berries are hard, so these must be hard white Spring berries.

This wheat arrived quickly and was very clean and dry. For health reasons I started grinding my own flour, and this is the wheat I’ve been using to do so. Its flavor is sweet and mild, not too earthy. I have had no issues with pests or residue of any kind. This wheat makes the best dinner rolls I’ve ever had, but is suitable for sandwich breads and other yeast breads as well. I like to mix with oat flour for quick breads, as this softens the flour enough to give a more cake-like texture. I have noticed that the flour ground from this wheat tends to make a drier, more crumbly bread, not like store bought bread. There are ways to remedy this, but in general freshly ground flour absorbs more liquid than store bought white flour. I’m very happy with this product and would definitely recommend it for bread making.

I have been using this grain for about 9 months. The product is consistent whether you purchase a large or smaller size. The hard and soft wheat are very tasty too.

Good, clean grains. The container was airtight and is such a bear to get off but that's a good thing when it comes to storing grains. Although it would be difficult to open for someone with limited finger strength or arthritis. They tasted good.

I have been making my own bread from wheat that I grind fresh for nearly 50 years. I go through about 25-40 pounds a year. I was so glad when I found Palouse about 5 years ago. Not only is it reasonably priced (and free shipping, which is amazing for something this heavy), and not only is it, as they say, "Certified Glyphosate Residue Free ... Family Farmed in Washington State, 100% Desiccant Free... non-GMO Project Verified, and Kosher," but it is also CLEAN -- that is, I don't get a cloud of wheat dust when I open it or or find dust left behind in the feed tray of the grinder, unlike every other brand I have tried.
