This is the answer to healthier bread that still turns out light & fluffy compared to whole (red) wheat flour. In an effort to avoid simple carbs (sugar, white flour, etc.) I use it for all baking now and have been real happy with it.

I mix this fresh and delicious flour half and half with rye flour for seed crackers. The rye is sturdy so you can roll it very thin. The pastry flour makes it shatter and melt in your mouth. So, so addictive. I like the small bags for refrigerator and freezer storage.

This is good all purpose flour but it’s NO pastry flour as the gluten content is mi-level at best. For the kind of pastry I am making it has to have higher gluten content otherwise the mouth feel is all off! For the price vs the organic certified flour, it’s a solid value. I just wish it can have higher gluten level.

Being new to sourdough from scratch baking, It was nice to find ORGANIC wheat flour that is difficult for me to find in my hick town grocery stores. Great price although it is taking a while to arrive. At least it's available & on it's way.

What I like best about this pastry flour is I don't have to buy a 5-pound bag. It's a good product; works well; taste is good. What else can I say? It's flour.

Use this for more tender pie crusts. My reg. flour ones always turn out tougher. Plus it's whole wheat--win win.

Best price for whole wheat pastry flour I've found. I use it as a substitute for half of the white flour in quick breads and cookies and no one has noticed any difference from 100% white flour.
