Fantastic for the money
Can't recommend these enough. Real deal, handforged Japanese knives! Edge will need a bit of touch up out of the box, but sharpen it and keep camellia oil on it and itll last a very long time! Outer layer is wrought iron with some kind of lacquer coating, inner layer is high carbon so it will rust if its not cleaned after use. The handle feels nice enough, but i replaced it with an octagonal one.

Great white#1 workmanship
Very nice for the price. After a little work and cleaning up the edges and putting on japanese natural stones it's on par with higher end white #1 knifes. Good heat treatment around 61 Rockwell hardness. Small over grind but was able to remove it on stones. Do not buy if not you do not know how to care for high carbon reactive steel. It will rust badly if abused and never put it in the dishwasher. It must be cleaned and dried after it is used, and wiped in-between cuts on highly acidic fruits.

This knife is reliable . I have been worked sushi industry about 30 years .this knife ok more than ok compare money to quality.

Blade Dented at the 2nd usage on a bamboo cutting board.
I don't think the knife is good quality , dispute been a white Steel # 1 or 2. I will not recommend as to buy.

Fantastic for the price
Purchased two funayuki's the 4.7" and the 5.9" Both came fairly dull, so expect to sharpen these on arrival. the 4.7 had a small bend in the edge right at the heel, and unfortunately I chipped the heel trying to straighten it, such is life and sort of expected at this price range. both knifes are a good thickness with nice even grinds and a nice taper towards the point. both were very straight (besides the small bend at the heel.) Sharpening was fantastic, both took a near mirror polish with very little work. weight in the hand is amazing! would recommend these to any one who wants a little project knife.

この大きさが凄く使いやすいですね。 ペティナイフを使わなくなってしまいました。 ネギや千切りもペティよりやりやすいです。 なんと言っても切れ味が凄い! 白一鋼とありますが本当の様です。 青二鋼の包丁も持ってますがそれより切れ味鋭い感覚です。

ゴツメの万能包丁として購入 Good point:・適度な重さ、分厚い刃幅のおかげで肉、にんにくやネギなどの食材を叩き潰す用途にも使える。 また、両刃の為より幅広く使えそう。 ・しっかり手入れすれば想定していたより錆びない。 Bad point :刃付けがされてなく、荒砥から研がないと使い物にならない。 ただ、研ぎの練習にはよかった。

いかにも手作り感があり、仕上げはイマイチですが… コスパを考えれば悪くないでしょうね。 切れ味は良い、持続性はまぁまぁ。 マメに手入れが必要です。 小さい刻みものに便利です。

大物を捌く時には重宝しますが、想像以上に重い。事前に研いでおかないと最初の段階ではたいして切れません。
