Yes, this product can be reconstituted for any recipe using egg yolk powder. You may also adjust the ratio according to the recipe.

Q: How long does this last after opening?

My last container was opened and kept in a tight sealed container. It was used up in about 6 months and seemed good as when opened. The replacement I ordered in January 2023 has a best by date of March 2024. I use the powdered egg to make a scrambled egg yolk for our puppy's breakfast treat.

Q: Can this product be used for sauces like hollandaise or mayonnaise?

I've used it in baking and it works good , I mixed it with another fresh egg for scrambled eggs and can't tell the difference. It might work for mayo and hollandaise sauce it seems like it would. It's a very good product.
