JANUARY 2024: These Zwilling nonstick pans are made of a heavy stainless-steel alloy, not softer aluminum like many other pans. Consequently, the metal is more resistant to scratches. I found the nonstick surface to be an average performer from a 'slip and slide' standpoint. However, I have been using these pans for a couple months and their nonstick surface is indeed very resilient as the manufacturer claims - I see no stuffs or scratches whatsoever. Although the manufacturer states they are safe to use with metal utensils, I didn't attempt this. I always use plastic or silicone utensils with these pans. And I carefully handwash them to they will last longer. This is in stark contrast with other, regular brand-name pans I purchased last year: despite using plastic utensils and handwashing, after 2 months their surface surprising looked all scratched and had lost much of their non-stick properties. Thus, so far, I'm very pleased with the performance of these Zwilling pans. A nice set. UPDATE - MARCH 2024: I've been using the 10" pan about once every other week, always handwashing it, never using metal utensils or abrasive pads. Well, after 3 months of occasional use, even if I generously coat it with vegetable oil, food such as eggs will stick to it, and badly so. That's right, even when coated with oil. I literally have to scrape the eggs off after they are cooked. Paradoxically, the surface of the pan still looks perfect (as expected) with not a single scratch. Who cares if a non-stick pan looks brand new when you have to scrape the eggs off? It's now become one of the most expensive sticky pans I own. A huge disappointment! Downgrading this product to 1 star.

My best purchase ever! Coating prevents food sticking and cleans like a dream. All metal means I can use in oven when called for. Handle is comfortable in the hand. Excellent quality.
