Q: Can added grates/griddle be purchased to use for all one cooking style for all four burners?

Yes, they told me in an email, the grates are $35 each. I didn't ask about the griddle.

Q: Can this be mounted on a boat pedestal mount?

I wouldn't. Although you could probably fabricate a mount, the unit would be awkward to use. It's fairly big and bulky.

Q: will metal spatulas scratch the surface?

No! I have used both Stainless steel and plastic on my grill and no scratches

Q: Is it possible to use 1 lb propane tanks?

Not that I know of. Standard 20lb tanks and bigger.
