Quality Steel Pan from France
Great material, thick walls, solid handle and nice shape for deep frying. Holds heat well. Safe for gas stove and oven.

Heavy gauge very nice sturdy high side pan
Heavy gauge very nice sturdy high side pan. It is my go to frying pan for almost any frying job and if there is anything bigger item to fry I use the bigger 12.5 country pan version. These pan are my favorite and I highly recommend it specially to those who got tired of using the heavy Lodge dutch ovens as fryers. I still use my cast iron dutch for other types of cooking but these DE Buyer pans are a lot easier to handle and my wife love to use it more than my Lodges. She commented that these De Buyers country pans are classy and good looking and I don't disagree. The other reviewer was complaining about the shipping and it just doesn't do justice to this pan. I own two of these pans the 9.5 and the 12.5 inch versions. I use flax seed oil to season it for the first time and oven style it like my Lodges and wrapped the handles with aluminum foils to avoid over darkening but it turned out to be looking copper color when it came out which I like it even more (the handles are made of stainless steel).

Versatile Addition Kitchen--Definitely Useful
While this Country Chef Frying Pan is marketed for searing meats, it is also great for sauteing, frying and cooking vegetables. Because I cook mostly vegetables, this pan works really well as a "demi-wok" for sauteing vegetables and frying cuts of veggies or even tofu. The oil/fats are better contained by the higher sides and the heat in the pan stays evenly hot when using to cook. (It also does a great job with browning and pan-frying chicken!) My only complaint was that when I received the pan, its interior was scratched. I followed the directions for using the pan, but after two uses, decided to re-season it, to improve the pan's interior "non-stick" surface and overall performance.

This is my favorite De Buyer
I had a 9" frying pan and liked it so much that I bought an 11" frying pan. Once they were seasoned, they both were virtually non-stick. I was looking for something more like a wok for when I make egg rolls and it seemed like most had a 5 or 6" bottom. That might have been fine for a gas stove but I have the electric glass top so wanted more surface area. I was looking at the De Buyer type and they had a deeper skillet but it only had the long handle and these things are heavy so need 2 handles to be easier to handle. Then I saw this Country Fry Pan and decided to give it a try....so much easier. I followed the seasoning recommendations using the oven, which I couldn't do with the other frying pans due to the coating on their handles, and it worked out pretty good. Put a thin coat of high temp oil like grape seed oil on the inside and outside (except the handles) and place it upside down in the oven and cook at 400 for few minutes. I let it cool down in the oven and repeated the process and ended up with a nice golden brown patina. the only issue with this process is that the oil didn't bond to the inside bottom of the pan so would come off when I scraped off the leftover food after cooking and it was really bumpy. Not a big deal though. I cleaned off the bottom and re-coated it with the oil, heated it up until it was smoking, turned off the element and let it cool off and repeated the process 3 times. The result was a perfectly smooth, dark and mostly non-stick bottom. The big advantage this pan has over the others is the high side. I can cook bacon and it doesn't seem to splatter all over as much and it will handle a 3 lb package of ground beef with ease. Yes, it costs more than some other options but it's made in France according to what I've read, (not China) and Yes, it's heavy but that helps the heat spread more evenly and with the 2 handles, it's much easier to manage. Also, it can go into the oven and it works on induction as well. If you're looking for cookware that you're not going to have to throw away in a few years or that doesn't add chemicals to your food, I would strongly recommend this cookware.

great but a little disappointed chipped edges
just per the above ..such a great quality product and I have others of theis brand. Not sure if edge chipping was a defect, second or shipping but I did not return it as its minor a great size for so many things appears over sized but turst me, bet to have the extra room

Love the pan
I have been cooking at home more often recently. I wanted a durable everyday pan. I wanted something with higher walls to catch some splatter, durable, and nonstick. Teflon pans are not durable for everyday use. Cast iron is good but very heavy and hard to find high walls. The mineral B was everything similar to cast iron but lighter. It is still a little heavy but more manageable. I had to get used to the oiling and cleaning of the pan. Once I got the hang of it, it was not that bad. Now most foods don't stick. This is what I called my everyday pan.

Quality, but not as advertised
I ordered the 11" diameter "country fry pan" (i.e. flat-bottomed wok). The Amazon posting includes a line drawing that clearly shows the pan is 4" deep. I already own two other woks. I bought this one specifically because it was 4" deep, and I wanted the extra depth for deep frying shrimp with less chance of hot oil escaping from the edge of the pan onto the burner. Unfortunately, the pan is NOT 4" deep. It is only 3 3/8" deep, comparable to the two flat-bottom woks I already own. I like the solid construction. With care, such a pan can last many lifetimes. No non-stick coating to break down, either. But I wanted a pan with 4" depth, and that is why I bought this one. For that reason, I'm very disappointed.

Not for me
Like other reviewers said, this is not a toy. It’s thick and solid, which makes it heat slow, makes the temperature control to be hard, and makes it heavy and hard to clean. I should have stick to my lightweight carbon steel works from local Asian store. Those are such a great relieve compared to this one. I do agree that this one has super high quality.

Love the size. I used it to sear steaks and the high edge kept most of the oil inside. Less mess to clean at the stove.

J'ai fais l'acquisition de cette poêle paysanne De Buyer il y a quelques semaines et c'est juste excellent comme cuisson. J'en sers pour des poêlés de légumes, des magrets de canards, mais surtout des Pommes de terre sautés, et c'est un régal ! Le croustillant des PDT à l'extérieur, et le fondant à l'intérieur. Je regrette de ne pas l'avoir acheté bien avant Une fois que vous avez bien lu et suivi le mode d'emploi le culottage se fait tout seul, petit à petit au fil du temps, et une fois le processus démarré, c'est un réel plaisir de cuisiner avec. Par contre, elle demande un entretien immédiat en fin de cuisson, et ça j'avoue que je n'y étais plus habituée avec mes poêles en téflon. Bref, une fois l'habitude prise, c'est que du bonheur et l'excellence du matériel entre les mains fait le reste. Je possède 3 poêle de cette marque et j'en suis ravie J'ai préféré le modèle avec les anses pour le coté pratique (rangement dans le meuble) et pour le poids

Arrivata presto, grazie ad Amazon che garantisce tempi brevi e Corrieri gentili (almeno quanto alla mia esperienza). La padella è' ben fatta e gradevole a vedersi. Non richiede troppe cure, basta seguire le istruzioni che consigliano di seguire una facile procedura (al primo utilizzo va lavata, poi, dopo averla asciugata con carta assorbente, va posta sul fuoco con un millimetro d'olio sino a che questo non arriva a fumare, quindi, rimosso l'olio, va asciugata di nuovo con carta da cucina); non ingombra inutilmente (grazie ai suoi due manici comodissimi per la presa); non tende a far ruggine; si può cucinare anche solo ungendola poco poco, quindi permette di usare meno grassi; non fa attaccare nulla e si pulisce in fretta (le istruzioni a riguardo sono chiarissime); essendo il ferro un ottimo conduttore di calore richiede una fiamma meno alta (chi ha un fornello a induzione eviti di metterla a temperature eccessive). La uso sia per quantità ridotte di cibo, sia per quantità abbondanti, perché è davvero capiente. Oltretutto utilizzare padelle come queste è molto più sano che non usare padelle antiaderenti, spesso anche costose (la De Buyer aumenta la sua antiaderenza a mano a mano che la si usa, migliorando nel tempo). Insomma: questa De Buyer è a mio avviso un ottimo acquisto ( ne ho anche altre piatte che uso spessissimo). Consiglio di conservare l'utile, piccolo minilibrettino con le istruzioni per mantenerla bella nel tempo.

Dies ist meine zweite Pfanne von deBuyer und ich habe mich ganz bewusst wieder für diese Marke entschieden. Diese Pfannen sind von hervorragender Qualität und haben eine Wandstärke, die sie schwer genug machen, um alle Vorteile einer Eisenpfanne auskosten zu können. Dazu gehört vor Allem, dass sie beim Anbraten die Hitze hält, also nach Eingabe des Bratguts nicht so stark die Temperatur verliert. Das führt zu einem wesentlich besseren Ergebnis als es beschichtete Alupfannen jemals können werden. Aluminium gibt Wärme schnell weiter, was aber den Nachteil hat, dass es auch schnell die gespeicherte Wärme verliert. Eisen / Stahl ist hier von Vorteil, da es einen größeren "Puffer" besitzt. Ich benutze die Pfannen auf einem Induktionsherd, da muss man schon aufpassen, dass sie nicht zu schnell heiss werden, denn dann besteht die Gefahr, dass sie sich verziehen. Sowieso sind diese Pfannen immer etwas nach innen gewölbt. Das verhindert, dass sie beim Erhitzen rund werden und auf dem Herd rumeiern. Eisenpfannen sind wie gemacht für Induktion, denn anders als Aluminiumpfannen, bei denen nur eine dünne Schicht Eisen/Stahl verwandt wird, bieten sie dem Magnetfeld eine riesige Angriffsfläche. Wo ich meine Hoffmannpfanne auf höchster Stufe 10 Minuten vorheizen muss, ist die deBuyer schon bei 2/3 der Leistung nach wenigen Minuten einsatzbereit. Auch beim Anbraten kann man sie an den Henkeln anfassen, diese werden kaum heiss. Die Pfanne kam schnell bei mir an, danach musste sie erstmal geschrubbt werden, um die Wachsschicht abzuwaschen. Nachdem sie trocken war, wurde sie dann eingebrannt. Ich mache dies mit Leinöl auf dem Gasgrill. Die Pfanne ganz dünn (!) mit Leinöl einreiben, am besten noch mit einem trockenen Tuch nachwischen (sie fühlt sich dann fast trocken an), und dann bei 250-300°C auf den Grill. Nach einer halben Stunde entnehmen, abkühlen lassen (bis man sie wieder anfassen kann) und das Ganze wiederholen. So bekam sie drei Schichten. Im ersten Gebrauch gab es dann Hähnchengeschnetzeltes. In die gut aufgeheizte Pfanne ein wenig Öl und dazu das Hähnchenfleisch. Super Ergebnis, es setzte kaum etwas an, dennoch hat sich durch den Fleischsaft eine schöne Kruste am Pfannenboden gebildet, die dann mit Brühe und Rahm einen tollen Geschmack ergibt.

Its a well built 32cm, 2,5mm pan, weight 2828 grams, handle to handle max diameter 43,2cm. Flat cooking area 22cm. I bought it mainly to act as a sort of wok pan on a 21 cm induction hob. The whole bottom does not heat evenly on the cooktop as induction only heats a smaller area than advertised as hob size, but that was to be expected on this carbon pan. Due that I can gather the food on the colder outside area for a moment when needed as Im wokking and have the lava in the middle. As it has a bigger floor area compared to a wok, I think the pan could be seen more versatile. No wooden long handle, so its suitsble for oven or bbq use as well. Its not a true wok nor a frypan subsitute though.
