in this brand but easily fished out of there as I roasted the peppercorns ...
OK I ordered this bag of the "wild" peppercorns and the same thing in the same 16 oz. size of"Whole Spice" brand. There was, and I showed it too 6 other guest at my house, two or three times as much volume in this package as in the other from "Whole Spice. We all agreed that this bag was heavier and it was not some sort of package illusion. There were small stems in both packages, and there were a few fatter stems, just three or four, in this brand but easily fished out of there as I roasted the peppercorns in my cast Iron dutch oven. The quality of the peppercorns was excellent. Wish you could smell them roasting......

Uncleaned Peppercorns
A third of the peppercorns was seeds and stems.I had to spend a lot of time cleaning out the seeds and stems.I was expecting a ready to use product.Other than the need to clean out stems and seeds, the flavor is strong and tastes wonderful.

Worthless unless you want your dish to taste like sand
I came back to the website after cooking with these as I thought they were possibly covered in sand and needed to somehow be cleaned. I was relieved to know I wasn't insane when I saw all the reviews complaining about crunchy inner seeds. If you grind these your dish will literally taste like you've thrown a handful of sand in the pan. In the picture of the random pinch I pulled out you'll notice lots of seeds and stems that would need to be removed to be able to cook with these. I like hands-on cooking but sorting each of my peppercorns and separating seeds and stems seems a little too much.I was also disappointed with the lack of "punch" from these peppercorns. Even when doubling the amount for a recipe they don't have much flavor.

Sichuan Pepper yes but low grade immature unoped seed pods
I also received a bag of "Prickly Ash" which Sichuan Pepper is technically called. But it is NOT Frontier product packaging (it was "super" brand a standard low grade oriental market brand), and it was basically low grade immature unoped seed pods that would never be found in a spice market. But sold to uneducated American consumers. that being said they were and are reasonably fresh but require intense cleaning. How you may ask? well first pour them in a bowl type colander and remove as many of the seeds as possible they are the round black parts they have no flavor and when stir fried are like grains of sand. then lay them out on the counter or large tray fish out the fully closed pods they will contain seeds you must put them in a mortar and lightly crush/rub them to rid the seed at this point the red/brown husk stem (flavorful husk) are ready for use. Yes it takes a hour or so Yes you loose almost 1/2 the weight to waste but until we can find a better source (please message me who I will buy and review) we get what we get. So the real price is more like 30.00 not 15.00

So Unusual
The Frontier Peppercorns, Sichuan Whole, 16 Ounce Bag, I purchased directly from Amazon are lovely. They are, as pictured, mainly red and brown.The flavor of this peppercorn is a combination of citrus and, what threatens to be, black pepper, but never quite arrives. The flavor(s) bathe your entire tongue, with each of the taste-bud receptors experiencing something quite different from the others. The peppercorns impart a numbing effect that is delightful. I have discovered, in talking with others, that each person's experience is unique.I don't do much Chinese cooking and I've never cooked anything Sichuan, so I will begin this culinary journey by trying these peppercorns in chicken dishes, salads, slaws and cocoas.

To start... I received my package exactly 24 hours after placing it on the regular non-rushed shipment format!!I opened the professionally sealed bag to a waft of spectacular, woodsy, smoky wonderfulness. The "peppercorns" are big and very fresh looking. The next day, having sealed the "peppercorns" in a ziplock bag, the smell in my kitchen is exquisite.I am very excited to cook with these. I will be buying more spices from this company soon.Product and delivery has more than exceeded expectation.
