Q: Is this coconut free?

Yes, it is coconut free. There is no coconut in any Vivian’s products.

Q: can this be used as a substitute for heavy cream?

It wasn’t my favorite and not the easiest to use. I tried to use it as whipped cream frosting and it was not successful. I am a professional chef who specializes in dairy free and gluten free meals.

Q: I made my first batch today and it was very thick like marshmallow fluff not light and airy like whipped cream. Did I do something wrong??

It is hard to tell without more details, but it may be in how you whipped it. This product requires an electric mixer to achieve the fluffiest topping. Make sure your water is cool rather than warm. The first packet also needs to be well dissolved before the second packet goes in for optimum whipping. Please reach out again if you experience problems with the second package. Incidentally, this product makes a good ice cream sandwich filling which will still be good even if it is not fully whipped so you can still salvage the batch you had trouble with.
