Can I spray this into a tray and apply with a brush?

I have never applied it this way, but can't see why not. The objective is to protect the cut edge of the glass and the silver reflective coating from moisture which causes the coating to discolor and flake off. An application that is uniform enough whether by spray or brush should suffice.

Would this product work to seal a whole mirror (small) that ipaintedon?

This product seals the bare edges of the mirror once it has been cut. The back of the mirror so the silver plate will not start to flake off. If you painted on the front of the mirror and want to seal it on you may look at the clear Krylon sprays or Rustoleum. The come in different sheens as well from flat to gloss.
