This Honesuke (Boning) knife is made in the same factory as Tojiro - Fujitora is the brand sold in Japan. The knife features a 150mm (5 3/4") single bevel (right hand) stainless clad VG10 blade - suitable for right handed users. Came very very sharp out of the box. Overall quality is excellent. Comfortable and stable resin handle. Great knife for cutting up poultry, boning, fish and vegetables. Very pleased with this and highly recommend. Shipped directly from Japan.

Good knife for butchering and maneuvering around bones.
I like it for butchering chicken/pork and what not. The size allows it to be easily maneuvered around bones to take it apart. It's decently sharp, but was not the sharpest knife I've seen out of the factory by a mile. The quality of the steel remains to be seen. I have not sharpened it yet. Balance is pretty good for a small knife with decent but not too much weight.It's also decent for filleting fish. Many Japanese use this for cutting fish and so do I. But because of the non-symmetrical geometry of the knife, this is not good for generic cooking use. This knife will slide diagonally through a vegetable AND resist going through harder vegetables (carrots, Daikon). Get a Santoku for that if that is your purpose.The little bump in the butt of the handle bothers me. It's exactly where one of my fingers go and it hurts. I wish it was more rounded off. As is, the corner is a bit too sharp and digs into my finger. This is really the only complaint I have with the knife.

Perfect for carving raw chicken
Got this knife specifically to carve chicken to make raw food for cat. We have to prepare 2 chickens every 2 weeks. And that means taking a whole raw chicken and deboning it completely. It feels like this knife is made specifically for that task. I'm sure you can use it for many other cutting tasks, however, I use it only for chicken and want to preserve it sharp. It's balanced so well and doesn't get stuck in the bone, so it glides and makes the job of deboning much easier. Please do keep in mind that it's super sharp. I was cutting while wearing gloves and lost my grip, ended up almost slicing my fingernail off by accident.

Sharp, well made Honesuki, perfect for breaking down chickens for Yakitori
Delivered quickly direct from Japan, this is a great knife - sharp, asymmetric bevel (almost but not quite a single bevel). Makes quick work of my yakitori prep.
