The slightly longer curved ergonomic handle provides a comfortable grip and features 7 signature black dots which represent the 7 Samurai codes of honor and moral principles. The beautiful hammered finish applied to the patented Cordova 18 core (Chromium, Molybdenum, Vanadium and Carbon) produces air pockets which help release food while cutting, giving the blade non-stick properties. Legendary industrial designer Komin Yamada brings a new age of innovation to Global cutlery with Sai, unifying function and design, these distinctive Japanese knives combine revolutionary ergonomic handles with triple-layered steel blades that maintain their exceptionally sharp edges. The first new cutlery line produced by Global in more than 25 years, Sai blends the Japanese company's tradition of craftsmanship with modern technological advancements. The knives combine three layers of steel: a core of patented, ultra-hard Cromova 18 Sanso stainless-steel alloy and two outer layers of more flexible 18/8 steel for added strength and resistance to rust. Review: Great Knife! - I ordered a Global Santoku knife a while back from a recommend in a knife forum. Turns out it was a great knife, and it quickly became my wife’s favorite kitchen knife - we had Zwilling/Henkels for the most part before I got these. They’re light weight, keep the edge for a reasonable amount of time (they all get dull, these commercials for the “world’s sharpest knife!” are silly, whack stuff up on a cutting board, go through some turkeys and roasts and it’s as dull as the $4 knife at the dollar store). They’re kitchen knives, so rust really isn’t an issue. They’re also lightweight (I believe on the bigger knives, the handle has a hollow cavity) – it’s all one-piece construction, so no handles coming off or getting damaged or destroyed by washing or leaving it too close to a burner. For Christmas I decided to replace all of our Zwilling/Henkel knives with Global knives. I ordered them à la carte – like everybody else, Global’s big sets had more than I needed and not enough of what I wanted, so if you see this review in multiple places, that the reason. Anyway, the 6” chef's knife is very nice, functional and worth the money.
Review: Anthony Bourdain was right... - This is a really awesome knife to have in the kitchen. I bought it on the recommendation of Bourdain and was very pleased that it's so comfortable to work with in the kitchen. Doesn't get slippery, holds and edge, easy to clean, etc, etc. Just be very careful as this is an actual SHARP knife! The angle they grind the blade at makes it very sharp and it cuts through things faster than you would think because there's less resistance. Pay attention or keep bandaids handy! :)

This is a really awesome knife to have in the kitchen. I bought it on the recommendation of Bourdain and was very pleased that it's so comfortable to work with in the kitchen. Doesn't get slippery, holds and edge, easy to clean, etc, etc. Just be very careful as this is an actual SHARP knife! This is my second Global knife. The first one was gifted to me 15 years ago and it still cuts like new. It was a smaller utility knife, and I have been using it daily. I decided to by a bigger knife -- chef's 6 inch. I have used it for a few days now, and I am very happy with it. It's big enough for me to feel the difference when I chop, but not too big for it to weigh heavy.
