## Description

Calcium chloride is a bitter calcium salt used in the food industry in cheese making, pickling, etc. Molecular gastronomy/modernist chefs use calcium chloride with sodium alginate to provide calcium for the gelling process. The two are typically used to produce apple juice “caviar” and other dishes featuring liquids encapsulated in thin gel. When using calcium chloride in spherification, be sure to rinse it off the surface of the gels in a cool water bath to prevent them tasting bitter. In spherification, calcium chloride is used in very small amounts (0.67% of total weight), so 3.5oz will go a long way. .
