The instrument reading may take a few seconds to stabilise, depending on the nature of the measurement. **Q: Hi. Can one have a cal certificate for the Gourmet?** A: No, It doesn't come with one. I assume this means they dont offer it at this price point. Seems very accurate through from my testing.I think that's why this is so cheap as its made by ETI, and the more expensive ones do have calibration. I have two other food thermometers, one of which you can leave in the food stuff the whole cooking time so I’m familiar with them and I know what “I like/expect.” From them It arrived in less than a week on normal delivery so that’s OK. I have used it about six times so far and it has been easy to use and clean. When compared it to a scientific thermometer I have it’s within 1oC of that so again OK. I have read some of the other reviews about its lag but I have not found this, certainly within 3secs [not an unreasonable length of time.] you get an accurate reading. As with all probes I have used it tends to work best if at least half the probes length is embedded in the food stuff. I have tried the “self cal” but I don’t know how you know if that would/is working or not. Though as I said above it is accurate enough compare to a scientific one from new.
