To my amazement it really works. De-bones trout for smoking rapidly and thoroughly. The meat looks a little rough where the rib bones exit, but once smoked you cant tell. I de-boned 18 trout in under 10 minutes, with a filet knife that would have taken me 30 min and I would have wasted more meat in the process. I was so impressed that I bought a second for my brother.
