Great smoked cheese.
Before I begin I have two reviews really. Cold cheese vs room temp. The cold cheese is ok. The cold non smoked version of this cheese is much better. There are some nice lactate crystals which is always an indicator of a nice cheddar. The flavor however is lacking. When allowed to come to room temperature this cheese sings it's smokey flavors, as the fat from the cheese sweats beautifully. I love Old Croc cheeses. If you haven't yet tried them, I would start with their cheddar to set the baseline, and then move on to the smoked.

Delicious smoked cheese!
This is my favorite smoked cheddar. I’m vegetarian now and miss bacon a lot, but the smokiness of this cheese reminds me of that bacon-y smoked goodness (there’s no bacon or meat in this cheese, it’s just a taste association). Try it!

I like smoked gouda but this isn't it.
I thougt that since I enjoy smoked gouda that I would like this smoked cheddar flavor, but unfortunately not. The flavor is somewhat off for me.
