How does this fare in baked goods & cooking?

This product is very good. In cooking it is ok, and will suffice, but if you are cooking where taste is important don't use this product. As a table salt it is great just not a good cooking substitute.

what is the amount of potissum per serving

530 mg per one serving. One serving is 1/6th tsp

None of company's answers to user questions made sense to me. Anyway, what is it? and in what proportions? potassium? what else?

It's almost pure potassium chloride (KCl), the other stuff is anti-caking/clumping agents. Potassium Chloride is 52.445%* potassium by weight. A 1g serving of 99% KCl provides 0.519g/519mg of potassium. I'm not sure where they get 530mg, but they're allowed to round off so those numbers can never be trusted completely. (* The molecular weight of K is 39.0983, Cl is 35.453)
