Does it contain any salt and if so, how much?

This is MSG which stands for monosodium glutamate. It does not contain table salt which is sodium chloride but it does contain sodium. MSG has 1/3 the sodium of table salt. I mix MSG with table salt in a 50/50 mixture. This reduces the sodium by 25%. It also has a pleasing salty flavor that enhances savory dishes. So, it enhances the flavor of my food and helps me reduce my sodium intake.

Is it good on fresh McDonald's fries, along with a generous slathering of pure melted cheddar cheese?

MSG presents more as a granule than a powder like table salt. I wouldn’t try to use it as a topper to anything but more like a seasoning to cook something with. If you’re melting the cheese, definitely add the MSG into the cheese while you melt it!
