Can volume be controlled (up/down) on the headphones?

Yes. You can adjust the volume on the headphones when using them over Bluetooth. The volume buttons are not active when using them with the 3.5mm audio cable since the headphones are powered off when using them wired connection.

Do the large ear pads come off ? And what is underneath?

Yes. You get both the over-ear cushions that come on the headphones and you also get a set of the smaller on-ear cushions that are included so you can take off the over-ear and replace with the smaller ones. Whichever you prefer to use. If you remove the cushion, it will be the plastic covering that covers the speaker.
