Tried a few recipes, and found that replacing salt one-for-one with this stuff gives a reasonably good pickle. Not great, but edible. No health risk, except that the low-temperature pasteurization method for canning pickles is NOT recommended for low-salt or no-salt pickles. Oregon State University Extension Service has a good discussion of the safety of taking the salt out of (vinegar) pickled vegetables. By contrast, if you mean a "lactofermented" pickles, the answer is a flat no. That comes right from the USDA Guide to Home Canning, where they explicitly say you can't do lactofermented vegetables safely without the salt. You can find people on the internet who have done it and survived.
