It is quite unlike other flour, its gluten is more fragile and I think it is best suited to flatbreads and pizza, but it delicious and crunchy. I have mixed it with other flours to make a more golden loaf with crispy texture. **Q: Can this be used in a breadmaker?** A: Yes.
