I keep mine in glass jars in the refrigerator and possibly in these conditions it will keep for a longer period. It is a really good chocolate, easy to work with and really delicious. **Q: The information on the amazon page says dairy free but on the bag it says "may contain milk" anyone got any more information?** A: I wondered about this too but on the Callebaut website they have a few 'lactose free' and 'vegan' recipes in which they use the 811 chocolate so they must be pretty confident that there's no milk in it. There's always a chance though as other products the factory makes do contain it so if you're hyper allergic maybe steer clear but otherwise it's probably fine. **Q: I normally get 70% or so, but they only sell that in huge bags.
