As I cook for just two now, I use these pans often. I find it hard to scale down recipes so I make a full batch and using these pans freeze the other half. Think eggplant parmigiana, enchiladas and even cakes (no frosting). No defrosting, just into the (toaster) oven and dinner is done! These pans are a little deeper than others which makes them perfect for 'saucy' dishes. They will work fine for some things, but I like to freeze casseroles in 8x8 pans and these aren’t deep enough for most of my halved recipes to fit.
