It seems to hold them together. Often just out of the package "raw" as they are parbaked. They are packaged in nitrogen and will last a year or more but once opened put them in the fridge in a quart ziploc or mold sets quickly. Consume within a week. They are a good substitute for dinner rolls, burger buns and sub rolls. I particularly like them with spaghetti soppig up the sauce. **Q: Why are these so expensive? You can get 6 cases of 4 at walmart for $20. Shame on you for overcharging people!!!!!** A: Shipping costs to customers and Amazon fees are added to items by 3rd party sellers. When I received the product I received two packs of the ciabatta rolls. I initially ate the first package shortly after its was delivered. This morning I went to open the second package and the bag was huge around it looking like it was ready to explode. When I opened the package and smelled the ciabatta, while it was still within date, there was a very strong smell of what smelled like to me of what a brewery smells like. It may not be moldy, however it's not safe to eat. This isn't the first time that I have run into this with a Schar product. My recommendation is to not consume it if the package has expanded to the point that it looks like it will pop. This is now the second product that I've had to throw away, as I had to with bread previous to this which grew mold while I was storing it. Very disappointed. I will likely go back to my other gluten-free products, because I can't afford to get sick from this which I believe might be why I was sick a month ago while consuming this.
