The muffins are soft and moist, with just the right amount of sweetness. And because the only flour is rice flour, there's no odd taste or aftertaste like you get with the mixes that use some of the stranger flour sources like sorghum or garbanzo. This is not a health food, and that is not a complaint. Its only virtue is that it's not made with wheat, barley, or rye, so that people with celiac disease can eat a normal tasting muffin like a normal person, without having to make it completely from scratch.Keep in mind this is a plain muffin mix so you have to add your own mix-ins. So far I've only made blueberry muffins with it, which turn out wonderfully, and I'm looking forward to experimenting with other fruits, chocolate chips, and anything else I can think of.My only complaint is that this is sold only as an add-on item, so I can only get it when I order something else.
