Is this product large enough to hold a 3-ring binder?

I’m not sure I never tried to put a three ring binder in mine. Depending on how thick it is could give you some closing issues. I’d try and put one in mine and let you know but unfortunately, somebody needed in more then me and took it for their own. I hope their enjoying it.

does it come with a bag to put the chair in?

No bag. You could use the plastic or the box.

could the backpack be removed by unstitching it from the seat (using a seam ripper?)

There only straps I’m sure they could be. If your just looking for the folding stool, I’d just by the stool itself
