At first I "held the angle" of the blade steady to the whetstone through each stroke by pressing my finger tips against the whetstone while holding the knife. Since the whetstone is mildly abrasive, beware not to constantly rub your fingertips against the whetstone through each stroke. You may not realize it at the time, but you would be essentially sanding your fingertips, mildly. It is safe to use and worth it. Je viens de m'acheter une vraie pierre japonaise de 1000 et elle est plus lourde que les deux pierres ensembles de cette compagnie. De plus le grain de 1000 et de 3000 sont plus "rought" que le grain 1000 d'une pierre 1000 fait au Japon. La ceinture pour polir est tout sauf du cuire. Bref ne perdez pas votre temps et votre argent si vous avez de vrais bons couteaux de qualité.
