Review: The best! - My in-laws turned me on to this salmon rub when we visited them in Seattle. It's my preferred way to cook salmon--wild caught and flash frozen sockeye, please. As my sister, who worked on a salmon boat in Alaska says, "Friends don't let friends eat farmed salmon," and, "If you can't get it right off the boat, buy it frozen and defrost it yourself. Never buy thawed-out previously frozen salmon at the grocery store." My sister taught me to smoke salmon at home, but despite her expertise, both her kids prefer my salmon, with this rub. A little rub on top, a bit of a rest to let it penetrate, a quick sear of the skin side in a hot iron skillet on the stove top, then a quick trip in the oven, and your salmon will be perfect! I'm given tubs of this salmon rub to many friends over the years. I can't recommend it enough. Complex flavor, with a little smoky piquancy from the paprika. (Tom Douglas's Rub With Love for chicken and steak (especially good for a southwest flavor) are good, too!)

A: Absolutely! Used it last week on some fresh sockeye salmon I brought back from Alaska and it came out delicious, as always. Use it on salmon in the oven, in the pan or on the grill.

A: I store it in the pantry with my other spices.  I have kept it for up to a year (until all of it was used up).

This is one of my favorite rubs out there, and years ago my sister would bring me back a tub every time she went to Seattle (where it can also be found in Tom Douglass' restaurant – Etta's, I believe). If you like salmon and haven't tried salmon with this rub, you are really missing out. This is absolutely delicious and really elevates the salmon. I am an avid cook and love to try new recipes, but about 2/3 of the time I reach for this rub when I make salmon, because it is so delicious. It makes it have a great sweetness and makes it well spiced/flavored (but not hot/spicy). If you put a good amount all over the salmon and then grill it, it soaks into the salmon and the brown sugar in the rub heats up and creates a bit of a crust on the top of the fish. Even those who might not love salmon, might be pleasantly surprised with this rub. We go through so much of this on salmon, that the small sized tubs weren't lasting long enough. This tub is huge and amazing – it will last so long that I plan to share some with my sister. I was pleasantly surprised at the size when it arrived, as I didn't think it would be quite as large as it is. For the price, if you like the rub, it is well worth buying the big tub over the smaller tubs... FYI, over time, after a year or so, the rub seems to cake up a bit, but it doesn't affect the rub at all and when you put it on the salmon and rub it between your fingers, the cakes easily break apart.
