Can you hook up a midi keyboard to ipad pro with this adapter?

Yes. You can also accomplish the same MIDI connectivity with some of the $7 "Lighting to USB" connectors, but this adapter has another lightning port for the purpose of charging while connected to USB.

Correct, it connects to the Lightning port on your iPad/iPhone and allows you to connect a USB device and a Lightning cable.

Yes. Any iOS device acts like a camera device when plugged into USB. So if you have this dongle on your iPad Pro connected to a regular lightning to USB cable on the iPhone, the iPhone will pop up as a connected camera device on your iPad Pro.

Can i listen to audio through headphones (or another audio device) connected to the lightning port at the same time as i use the usb port?

I tested with the lightening port earbuds as well as the lightening to headphone jack adapter and it kept giving an 'Accessory Not Supported' message.  So, it appears that they are only allowing the lightning port on the adapter for power.  However, I did buy a usb hub recently that has a traditional headphone jack and it WILL allow me to use the USB functionality + wired headphones.  Below is the link to the usb hub on Amazon:
