If I want to add an off switch, what do I need?

This device has an auto shutdown feature. After a few minutes of inactivity, the screen appears blank. I do not see a need for a switch. I use this device daily and it has served my needs perfectly. Hope that helps. Best of luck to you.

How long does the battery last?

I am sure it depends on the battery, but they last a very long time. At least 8 months

Can this be set up to count people entering and leaving?

This counter only advances the count when a magnet comes into close proximity to the probe. I'm not sure what you have in mind but you could possibly place the probe near the edge of a door and mount a magnet to the door edge. That way it would advance the count each time the magnet moved past the probe. This really isn't designed to be a people counter and would require some modification.

The spec shows lowest temperature range is -5 degC. What happens if temperature goes below that temperature? Does it damage it?

I have not tried it in an extreme environment but the display is a liquid crystal device. I would presume that at extremely cold temperatures the segments simply would not change states consistently and therefore you would not get an accurate readout.
