How do resistence bands/tubes compare to free weights?

There is continuous resistance, but it varies according to the amount of band stretched. You can use a small number of bands to replicate a very large number of dumbell, barbell, and cable machine exercises. You can use them for legs and such, which isn't possible with dumbbells for example. They do eventually wear out, but they are very cheap and do last a long time, even with constant use. They are easy to store and great for travel. Be sure to get a few accessories like Thera-Band assist strap, handles and a door anchor. You'll be able to do more exercises. By the way, every Thera-Band and accessory includes a sheet with safety info and several exercises. You'll find even more online, but these are great as a basic start. Check out "the band man" resistance band training website and youtube videos if you want to take your health seriously and need more guidance on specialty moves. I didn't find it necessary to buy his specially made bands, I use plain Thera-Bands, not tubes. I'm sure whatever type you get will do the job though. Be sure to observe the safe limits of stretching each band, and wear eye protection if needed. There's an army fitness guide I'd love to get hold of too. So that will tell you that bands can do serious training. I'm glad I got mine in physical therapy after an injury. I'm in better shape now than the past 30 years.

Can I use multiple pieces of bands/tubes to increase the resistance of an exercise?

Yes, you may use two similar lengths of bands to increase the resistance. This will have a cumulative effect on the resistance.

what are some exercises I can do with these bands? Or does anyone know where I can find a list of exercises?

There are several exercises included with each band or accessory. You can also find some on the Thera-Band web site.

There are lots of youtubers who post videos.

And there's a good site called resistance band training by "the band man".  He has free videos and sells DVDs too.

How do i know if i need the latex-free bands or not? and does the resistance of theraband latex free bands match theraband latex bands?

I've had both and found no difference between them in resistance.

You'll only need latex free if you have a latex allergy or are likely to develop one because of some health issues.
