Big pet peeve of mine: do they tip over from the weight of the handle if there's nothing weighing the inside of the cup down??

The short answer is no they don't tip over when nothing is in them; however, the 1/4 and 1/3 cup are a little more unstable, and if pushed could kind of fall back on the handle and rest there.

Why did the 1/8 cup measuring cup disappear

1/8 cup = 2 tablespoons...... 2 Tbsp. just as easy to measure.

Are the edges on these sharp? Also what grade of stainless?

I wouldn't say the edges are sharp, they arr thin. I bought them because The American Test Kitchen did a study on measuring cups and these were evaluated as the best. I have no idea what grade the stainless is. They are great.
