How good is the quality?

This is actually a high quality item. However, I will say that the shipping left a lot to be desired. The box was in tatters when it arrived and I thought that the machine would certainly be damaged but it was fine, thankfully. It's a very heavy machine, solidly built and everything works perfect. I bought this for my wife as she hates the gym but the quality is every bit as good as the gym models.

Can it be used without a preprogrammed workout? Manual mode?

Yes, you can use a manual mode with this unit.

can i plug an ipod into the console?

The display has a 3.5mm jack on back that connects to built in speakers; this an input.

If I purchase assembly how soon after delivery do they come

Prime members can expect delivery in 1 to 2 days on Prime items. I can’t remember how long it took for the bike but I don’t think it was more than 4 or 5 days.
