## Description

Our dry cured, hickory smoked bacon is deliciously succulent. Our aging process means that our thick, hearty bacon won’t shrink even under the harshest of cooking conditions. The unique flavor and sweet aroma of our country bacon is uniquely Johnston County. Refrigerate upon arrival. Fry over medium heat in skillet until slices are 160 degrees Fahrenheit. Pre-soak slices to reduce the saltiness and the resulting bacon with be fatter than grocery store bought sliced bacon after cooking. Note: This is cured the old fashioned way with salt and does not require refrigeration for shipment. It has a shelf life of three months. Refrigerating or freezing upon receipt will extend quality and life of the product. All products are USDA inspected and meet all USDA shipping requirements for safety Richard's Review: The slab of bacon looked so inviting, I sliced a few pieces off of the slab and cooked in my cast iron skillet. Since I really like salty cured meat, I did not pre-soak to remove some of the salty taste. I had to cut each slice into two pieces to make them fit better in my skillet. They cooked up nice and brown with little shrinkage. I also thought I would use our red eye gravy mix (1 heaping tsp with 3/4 cup water) and make a nice meal of bacon, biscuits and ted eye gravy. Well I love the bacon, it was crispy and sort of a mix between streak o' lean and bacon. I really liked the biscuits with lots of red eye gravy and the hickory smoked taste of the slab bacon. I had a nice cup of dark roast coffee and finished it off with another biscuit with butter and sour wood Honey. Mmmmm Good!

A: Yes, it is not kept in refrigeration in some of the stores where it is sold.

**Q: Does it have the rind on it?**
A: No, no rind. It's ready to dig into.

**Q: How long does it need to soak**
A: We do not soak it.  We slice it and broil it until crispy.  Delicious!

**Q: Is this product salt cured or sugar cured? Pic says sugar, description says salt. Thanks**
A: This is salt cured. Very good if you love salt. I found the only thing I could use it for was to flavor beans.Probably more of a salt pork than bacon.

So let me start by saying this bacon is extremely salty, which it is supposed to be.  If you cut this into slices and fry it up and start eating it you are going to be disappointed.  Use in a recipe that requires bacon and leave out some of the salt from the recipe.  I tried a slice, fried it up, ingested and almost went into kidney failure.  I made it with navy beans and cornbread and could not be happier with the product.  I cooked some up with fried potatoes, peppers and onion and did not add salt to the potatoes and it was perfect combo.  I think this could also be good in the summer for BLTs with avocado, I say summer because grocery store tomatoes suck, it really needs a garden tomato.DON'T EAT IT STRAIGHT!  Pair it with something or risk a toxic overdose of NaCl (Sarcasm)Some people have also commented on the fat content, I found it to be comparable to regular refrigerated grocery store bacon.  I have not tried to use the fat for cooking spanish rice yet but I will soon.  Bacon is supposed to be fatty, it what makes it good.  Don't eat it all in one sitting, moderation is good.I think for the price of this bacon one should have a plan of what to do with two pounds before opening.  Also have some parchment or wax paper for what you do not use immediately.Enjoy and experiment.

Ive bought this excellent quality  product twice before, accompanied by  the wonderful, scrumptious biscuit cut packets which, to my disappointment, didn’t accompany the bacon slabs this time.  However, the bacon is delicious and I love that it carries the rind. It’s an excellent flavouring for soups and other dishes after a bit of rendering.

    A bacon treat...

This is truly the best old fashioned salt cured bacon I have had in fifty years. One taste reminds me of hog butchering day in the winter, and climbing the attic steps up to the attic to see and smell the wonderful hickory flavored hams and bacon slabs hanging from the rafters. When frying in the skillet, this bacon doesn't shrivel up and cook away like the "bacon"  you buy at the store. A little more expensive and worth every penny!
