The taste is top notch, nothing crazy overboard or artificial tasting but it tastes exactly how you imagine jerky should taste. It seems like they used really good quality meat and didn't need to throw a bunch of extra ingredients/preservatives in while preparing it. The bag itself seemed like more than 8oz but I didn't weigh it. If you're looking for a quality product, that tastes good with minimal processing (and made in the US) this is your ticket.
