Q: can I use this for my electric stove with wok that is not flat bottom?

I used a damascus carbon steel round bottom wok on a ring on my electric stove for years. It worked great. The biggest issue is you cant get the instant temperature change that you do with gas. That can make a difference with some recipes, but it never stopped me.

Q: do you have to use a wok ring to cook on gas stove

You can set the wok directly on the gas burner grate as long as it is steady enough to cook with. I've set larger woks directly on a gas burner and they have worked fine. The closer to the heat source the better. Experiment and find out what works out best with your wok. You can also buy different widths of heat rings to bring the bottom of the wok closer to the burner.

Heat would de-magnetize a small piece of metal like this.
