Potato flower is not keto? So why sell it as one

Thanks so much for reaching out! There is a lot of skepticism around which fibers are truly fibers and why because there are unfortunately greedy companies that have called ingredients "fiber" when in reality they act like carbs in your body. So I totally understand where you're coming from! We use insoluble fiber from the potato peel, which is not digestible by the human body (we don't have the enzymes to digest it so it is sort of like eating grass). We are not using any of the starchy part of the potato itself. I hope this helps to explain!
