As far as I can tell, you can't collapse just one shelf. They all fold in half when you close it.

does this roll from one carpeted surface to others piled carpet surface without problem also over door threshold

I wish I had gotten this cart years ago! I love it! It does go over carpet well. I don't have a threshold so can't answer that question. But it glides very easily. I load my groceries onto it at the front door and just roll it into the kitchen to put it all away. One trip! Then it folds up and rolls into the storage closet taking up very little space, ready for when I need it again.
