Do these leave a white residue in drinks as other silicon trays are noted for doing?

You may be experiencing mineral deposits from your water. Filling your ice cube trays with white vinegar and letting them set for 12 to 24 hours should take care of the problem. Heating up the vinegar before pouring it into the trays should shorten the sitting time. This stuff demineralizes plug-in appliances that heat and dispense hot water for coffee, tea, etc. I've used it to remove mineral build-up in my hot pink plastic sports squeeze bottle stored in a box for a year. No etching or color bleed. Vinegar will work. Good luck!

So each cube holds about 1/3 cup of fluid.

If you stretch the silicone, does it turn white, or keep it's original color?

Turns white. Then goes back to the original color when unstreched.

Do the ice cubes come out easily?

YES! I've tried another tray on Amazon (by Ticent) and bought the Kitch because the Ticent tray was too stiff (see my review there). The Kitch trays have thinner walls that more easily stretch. It takes zero effort to push on the bottom and have the cube rise from the tray.
