When I cut the edge of the Stiles it cut a rectangular groove instead of a mirror pattern of the rails. so in the corners of my frames there is a gap

I would need to see a picture of the set of cutter to understand what you mean. Cutting the stiles and rails should give the same pattern. Remember you have to cut the end of the rail first before you do anything else.

how sharp are these router bits because bought wants from other company and there where burning the wood?

I am happy with mine. I don't think there is a set that won't burn the wood if you take to big of bit into the wood. My last cut I only take 1/64 to 1/32 of a cut and I never have burn marks.

Can the back cutter be removed to make "proud" panels?

Yes. The cutter and bearing is removable in case the bearing ever has to be replaced
