**Q: Can this Koji be used to make Miso?**
A: Yes you can, the Koji-Kin(fungus) you can grow it on the the grains after steaming them in a tub. I use a tub with waterbottles filled with hot tap waters. the temp needs to be around 80-86 degrees to grow for 30 hrs. make sure to gently move the rice around every 10 hrs to get it to grow evenly across the rice. I used plain medium white  grains. before you steam the rice be sure to wash the rice in a plastic tub until the water is clear.Miso (みそ or 味噌 ?) is a traditional Japanese seasoning produced by fermenting soybeans with salt and koji (the fungus Aspergillus oryzae) and sometimes rice, barley, or other ingredients.

**Q: Can the Koji sit at room temperature for a few days without spoiling?**
A: If you mean after the Koji mold has been incubated on the rice, then I would suggest refrigerating it once it's reached the desired maturity.   At room temperature, it will likely continue into full maturation (turning green) and begin sporing.   Many people will spore a small portion of their koji'd rice in order to have their own spores for future batches.

**Q: Can this be used to make barley koji? I want to make my own koji to then make miso. Thanks!**
A: Yes.  These are Aspergillus oryzae spores.  You can grow them on whatever grain, legume, or other appropriate substrate that you choose.

I originally got this for rice wine (sake) but decided to use this for Kome-koji instead. I discovered yellow koji is better for rice wine making, but the Kome-koji this product makes its really good! Thanks for the quick delivery and quality product!

It works! It did make my koji rice a little yellow in appearance but my sake tasted good when it was done so it definitely works!
