If it's soft the grated cheese will stick inside the cylinder and you will have trouble getting it out. This was also easy to cut vegetables; the blades are very sharp. The suction is also good, and it stabilized the grater. This purchase was worth the money I spent, I like it and I will keep using it.

What a great tool to have. So glad I made the purchase. This item was purchased for the purpose of grating cheese and Vegetables. When I first received this, I was ready to return it. It looked flimsy, and the grating/slicing edges didn't look like they could be sharp. First use, 180 turn of opinion. This thing works like a dream. The suction base is (going on six months) still very secure. The crank handle is just the right length for effortless grating. Cleanup is easy as well--no hidden corners, quirky angles. I don't, but see no reason why you couldn't put in the top rack of dishwasher. The speed is great--you can reduce a 2 inch cube of cheese in about 1o seconds.
