What is the handle made of?

It is written in the description. The handle is stainless steel and the blade is plastic. I could be wrong but I suspect they have this backwards? :) In any case the description could be better with a bit more detail of what steel instead of this generic stainless description as well as what kind of plastic polymer is used for the handle.

Is this from their Professional-S series?

No - The S Series are made in Germany, do not have the rivets in the handle, and cost almost 2x of the Classic Series. As others have pointed out, you still get a great knife for the price. My S knives still need to be honed and sharpened regularly.

Does this knife have a full tang blade that extends through the handle? Not possible to tell from the pictures. Only visible from top of knife.
