Amelia Freer shows how easy and delicious healthy food can be prepared. I do have both of her books and love love love them.

This lady is genius! The Eat. Nourish. Glow. book really opened my eyes to eating and cooking foods differently. I realised that a lot of the foods I always thought were good for me were not that great after all, and I was keen to introduce her suggestions and ideas into my own diet. The problem was that the first book had limited recipes to try. I bought other recipe books and found some good recipes as well as a lot of recipes that just didn't inspire me so much, and eventually I sort of drifted, and started reverting to old bad habits. Not anymore! Cook. Nourish. Glow. has a lot of really tasty recipes as well as suggestions and tips for creating your own dishes using whatever you have in the fridge. My husband is a tough nut to crack when it comes to his food, but even he is enjoying our meals. I have already made a number of the recipes including the stuffed peppers with an egg on top (delicious beyond words - note: don't over fill pepper or egg runs out!), chicken and tarragon stew (yum, I couldn't get tarragon that day so used another herb and it was really yummy) and veggie chilli (so easy and quick for something so tasty). I have always been interested in food and healthy living but have found this book has given me the confidence to try some different things, using her ideas as a basis, but throwing in anything I have in the fridge. My food waste has reduced considerably. I do accept that some ingredients are perhaps new to a lot of people (as they were to me a year ago when I read Amelia's first book), but I have found them really easily in my local tesco store and once I tried them I felt happy to buy and cook with these ingredients again. I feel like I'm no longer bloated all the time, I don't feel like I'm 'enduring' a healthy eating lifestyle, my meals are not bland and sad as it sounds, I look forward to planning and preparing (and eating!) food. I really recommend this recipe book and think of all the current recipe books of this type, this is the one to beat. Happy cooking!
